Rainbow Vegetables

I have heard a lot of people talking about roasted vegetables recently, so I decided to give them a go. I set myself up for hating them, my mum used to make them a lot when I lived at home, when the only vegetable I would ever eat was peas! So I did set this up as a fail before I even started.

However, I was very surprised! The boys were instantly interested in all the colours on the chopping board and Noah came up with the name "rainbow veg"! They both stood in amazement at the oven door, I will be making them more often just to get 5 minutes peace!!

Anyway, all I did was chop up some leftover veggies from the fridge, filled an oven tray and sprayed with garlic frylight. Easy as peas!

The oven was set at 180 and they roasted for about 1 hour. I did keep checking them to make sure they didn't roast too far.

The boys had homemade star pizza's and we had steak with carrot fries. The easiest, most yummiest meal we've had in ages and we all sat very quietly at the dinner table (which is a very good sign)!!
