Carrot fries



You may have noticed that I don't usually eat potatoes! I don't particularly like them, I never have done and since losing weight with Slimming World I've eaten them less and looked for alternatives when cooking a family meal. I do however, love carrots! I pretty much squeeze them into every meal, especially breakfast! Carrots are speed and make delicious fries.

I use this method when cooking potatoes, butternut squash and swede chips and always have brilliant results! Pretty quick cooking time also! You can also see the recipe for oxo roast potatoes here!





Method

Peel the carrots and cut the carrots into batons, usually half and half again

Pile into a microwavable bowl and spray (just a 1 or 2 sprays) of Frylight - I use the Olive Oil variety as this is best for roasting

Microwave for 3-4 minutes

Place in an oven / roasting tray (I use a baking sheet lined with a silicone liner) & spray with frylight.

Roast in the oven for approximately 20-30 minutes 

Absolutely delicious!!
