Carrot Cake Brekkie

I threw together some ingredients this morning and WOW! I died and went to carrot cake heaven!

You can adapt this recipe with ingredients that suit you, there is no right or wrong way, just remember to check your syns! 

I mixed my 'healthy extra b' up a little, but you can use 35g oats if that's easier. The grapenuts just gave it a biscuit taste and a crumbly texture.

These can be syn free (using your hex b), however I added a Whitworth shot for 4.5 syns which was heaven! Plump raisins and chocolate pieces were just perfect!


17.5g oats (1/2 hex b)
17.5g grapenuts (1/2 hex b)
2 eggs
1 good dollop of quark
1 finely grated carrot
1 teaspoon mixed spice or cinnamon
Sweetener (amount to your taste), I used Sukrin Gold which is a syn free brown sugar alternative
Lemon or orange extract

Optional - Whitworth shot, I used Orange & Chocolate Seeds variety for 4.5 syns 


Super easy! Mix all the ingredients together and pour into muffin moulds. I use silicone moulds, as in the photo above as they stick less. This mixture did make 3 good sized muffins (the photo does show two, but I ate one before taking the photo!).

Mine took around 25 minutes in a preheated oven of 180, but this will depend on the size of your muffins so keep an eye on them!
