Cajun Chicken

My favourite recipe at he moment, Cajun chicken! Its full of speed, quick and easy, plus the boys enjoy it!

I tend to add what vegetables I have in the fridge and vary the ingredients to keep it interesting (as I have this alot)! So please feel free to mix it up!


1 chicken breast diced - I use livelean for my meat supplies, so one chicken breast (they are huge!) is plenty for me
1 red onion finely chopped
1 chicken oxo crumbled
2 tablespoons of cajun spice
1 tablespoon of chilli flakes
Cup of boiling water
Veg - I like to use spinach, green beans, swiss chard and peppers


Add the finely chopped onion, peppers, diced chicken and frylight to a frying pan and cook on full until the meat is sealed. 

Take off the heat, add the cajun spice, oxo and chilli flakes - pour over the boiling water to just below mixture level and stir well.

Return to heat and bring to boil, add spinach, swiss chard and green beans (I pre-cook the green beans beforehand).

Reduce to medium heat and simmer, stirring occasionally. 

After around 10 minutes the sauce reduces and becomes sticky. Once this happens, its done!

I like mine with chilli cheese peppers or courgetti! Yum!
