Scan bran carrot & courgette cake

I totally love adding finely grated carrot to pretty much everything at the minute! Its speed, it bulks out my portion size and I am always left feeling full. I've noticed a couple of people also adding courgette to recipes, so I thought I would give it a go! I love trying to squeeze as much speed food into my meals as I can, however I'm not a lover of courgette! Stay with me on this one, again it sounds disgusting but it really was delicious!

Look at the size of it! That whole cake is 2 syns (using scan bran as my healthy extra b).


Ingredients

5 scan bran (using healthy b or 5 syns)
1 finely grated carrot
1 half finely grated courgette
2 teaspoons of honey (2 syns)
2 eggs
2 teaspoons of mixed spice
1 teaspoon of ground ginger
4 tablespoons of sweetener (I use sukrin gold which is a natural alternative to brown sugar)
2 big dollops of quark

Method

I soaked my scan bran in a tiny amount of boiling water to soften, which made them easier to mix. When they look like mushy weetabix (only way I can describe!), add the rest of the ingredients and mix really well.

Pop in a pre-heated oven of 180 for about 30 minutes or until the mixture has come away from the sides. Really simple!

I used paper/card cases which I bought from TK Maxx for a couple of pounds, I eat with my eyes so these little things make me happy, but normal silicone or lined trays are fine! Would be fantastic made into cupcakes! Yum!

I had mine with lemon flavoured quark and berries.


Again, I know it sounds bloody dreadful, but it really was delicious! My kids couldn't get enough of it and ate every crumb! Messy pups!

  1. I tried this today as part of my scan bran challenge at slimming world, it's gorgeous, I had it with quark mixed with lemon juice and forest fruits only managed to have half so saved the rest for a snack this evening.
