Chocolate weetabix muffins

Hands up who's made weetabix muffins and found a raw soggy mess in the middle! Annoying! 

I have found the solution, silicone donut moulds! A couple of pound off ebay and they are perfect! Dollop sweetened quark on the top and you would never know!


2 weetabix (healthy b) crushed finely
2 eggs
2 dollops of quark
sweetener to taste (I use sukrin gold natural brown sugar alternative)
1 finely grated carrot (optional but it makes a lot more mixture)
1 sachet of options chocolate (2 syns, but please check as these can vary)


Mix together, really well! Spoon into moulds and cook for 15 minutes in a pre-heated oven of 180. Easy peasy!
