Summer berry roulade

I couldn't wait to write about this one! By far the best thing I've made, its delicious! 

I make lots of sweet treats that take the edge of the real thing and they've got me to where I am now without having a binge, however this really does taste like the real thing and I am complete hooked. The whole roulade is only 1/2 syn! 

What's even better, after demolishing half the roulade (and it was a big one!), I was too full and satisfied to eat the rest! 


1/2 tub of quark
4 eggs separated
5 tablespoons of sweetener
1 teaspoon of baking powder (1/2 syn)
1 teaspoon of vanilla essence

1 tub of quark
2 tablespoons of sweetener
Fruit of choice - I used half a punnet of frozen summer berries from Aldi which I defrosted beforehand and some fresh strawberries


Separate the eggs whites from the yolks into two bowls. Whisk the yolks with 1/2 tub of quark, baking powder, vanilla essence and sweetener. In a separate bowl, whisk egg white until stiff, then whisk half the egg white mixture in to the egg yolk mixture & fold in the rest.

Pour onto a lined baking tray and bake in a preheated oven of 180 degrees for 15 minutes or until golden. Leave to cool completely.

Mix sweetener and quark together and spread over the cool sponge. Add fruit filling and roll, sprinkle sweetener on the top and serve!

Tip! Don't over fill your roulade with fruit or else it wont roll well.

  2. How big is the quark tub? We have 2 sizes 250 or 500g ?

  3. Hi Joanne, I use the 250g tubs of quark - I've never seen a 500g tub, they sound amazing! I will edit my recipes to make sure they state this for future reference! Thank you xx
