Summer berry mousse

Oh my! So delicious! I don't know how I was able to let this set because I was eating the mixture as I was making it! The whole mixture is 1.5 syns and I made two large bowls full.


1 tub of quark
1 packet of sugar free jelly (I used Strawberry Hartleys for 1.5 syns)
2 egg whites

Summer berries for topping 


Dissolve the packet of jelly in a small amount of boiling water and leave to cool, meanwhile whisk egg whites until stiff. Mix quark into the jelly mixture well and then fold in the egg whites. Divide into desired portions and place in the fridge to set. I left mine for around an hour. Add berries to the top just before serving.

Tip! - I used frozen berries for the topping as they release a little juice which goes perfectly with the mousse.
