Speedy beef ragu

My absolute 'must have' recipe is beef ragu, I cook it in batches and I use it for loads of meals. I change the vegetables every time I make it, depending what I have in the fridge.

I have it with cheesy stuffed peppers, I stuff it in peppers, its great as a bolognese and I even use it to make a quick lasagne. I pack so many speed vegetables in and end up with a HUGE portion! It lasts all week!

Ingredients

500g lean mince (less than 5% fat) 
1 carton of passata
1 tin of chopped tomatoes
1 onion

Then vegetables of your choice, this time I have used:-
1 carrot
2 peppers
4 sticks of celery
handful of cherry tomatoes roughly chopped
(leeks are really nice too!)

To season, I've used:-
Chilli and garlic flakes 
Mixed herbs
Oxo cube


Method

In a large saucepan, brown the mince, onions and sprinkle over an oxo cube, Drain any excess liquid and fat from the saucepan. Add the vegetables (not fresh tomatoes), passata, chopped tomatoes and seasoning. Give a really good stir! Bring to the boil and reduce to a medium/low heat. I let mine cook for around 45 minutes or until vegetables have softened and sauce has reduced, this may take a little longer if using carrots. If you are adding fresh tomatoes, do not add until the last 10 minutes. 



I have divided into four very large portions which I store in glass jars in the fridge. Be ideal to freeze and use at a later date.
