Lunch for one

On the rare occasion both boys have a nap, I have a little time to myself and have lunch on my own! I'm a mum to two toddlers so this was a real luxury!

I'm still doing SP and although I haven't followed my meal planner exactly this week I have stuck to plan.

I made a delicious chicken and vegetable stir fry with extra beansprouts, absolutely packed with speed food and completely syn free! Bonus!

For pudding I had a hi-fi bar tartlet with sweetened quark and berries, completely free with using my healthy extra b. So quick and easy to make and I believe its out of the new 'meals for one' book. I picked up the recipe from someone in group, it was yummy!

All I did is break up the hi-fi bar, I used the rocky road one but I should imagine it would work with any variety or any other similar cereal bar, and popped it in the microwave for 30 seconds. It should be a gooey mixture. I then moulded it into a muffin tin and popped it into the fridge to chill for about 15 minutes. 

Once it had chilled I popped it out of the mould, it should look like a little chocolatey basket, I just added the quark and berries then scoffed it in one! Delicious! 

Lunch for one! Heaven!
