Creamy cajun chicken

I pinched this recipe from a beautiful lady on instagram @little_bit_less_sw and added a few bits of my own! Its delicious!

If your not a fan of quark, you can leave it out (I will be doing this next time I think) or you can add natural yoghurt.

So delicious! I used some extra cheese triangles for my spinach stuffed peppers, sprinkled with chilli flakes.


2 chicken breasts 
4 tablespoons of quark
2 laughing cow light triangles (you can have 4 for your healthy a)
1 tablespoon of cajun spice
1 red oinion
150ml chicken stock
1 garlic clove
1 handful of spinach


Dice chicken breast into bite size pieces and seal in a frying pan with frylight. Add chopped onion, garlic, chicken stock and cajun spice and mix together. Cook on a medium heat until the chicken is cooked through and stock has reduced by half. 

Add a hanful of spinach, once wilted add the cheese triangles and stir until completely melted into the mixture. This bit is important! Remove the pan from heat and stir in quark. Quark will curdle if you leave the pan on the heat, its fine to eat but it doesn't look appetising! 

If using your healthy extra a for cheese triangles, this would be free. If not, you will need to use 3 syns.
