Cheesy leeks stuffed peppers

My kids love cheesy leeks, something I used to make when they were being introduced to solids. I had some leeks left over in the fridge so I thought I would make a 'grown up' version and stuff them in a roasted pepper! Success! They were beautiful!


1 chopped leek
1 pepper (halved and seeds removed)
4 dairylea light triangles (healthy a)

I served mine with bacon and lightly fried spinach and plum tomatoes.


Place the chopped leeks in a frying pan with frylight and cook gently until softened. Spoon into your peppers and top with cheese triangles (I like to add a few chilli flakes too). Place into the oven for around 20-25 minutes at 180 degrees. Serve with whatever you fancy! They go great with bacon!
