Carrot & raisin oaty cookies

These sound totally bizzare but honestly guys, my kids LOVE them, they are so yummy!


One way of bribing Noah to be quiet when trying to nap Jude, is to promise him we'll make cookies when we get downstairs. This was promised today! So I have a little helper and we made a huge batch of cookies!





Ingredients

35g oats (healthy extra b)
1 egg
1 finely grated carrot
1 snack box size raisins (2 syns - please check as some brands are 2.5 syns)
1 tablespoon of mixed spice
Sweetener to taste if required 

Please note the above ingredients will make approximately 3 - 4 cookies, depending on size and thickness. I have multiplied these ingredients by 4 to make a larger/thicker amount of cookies for the boys biscuit tin.

Method

Mix all ingredients together and mould into shapes required. As we are making a large amount today, we have used a round silicone cake mould. 

Bake at 180 degrees until golden, usually around 10-15 minutes.



Once cooked, leave to cool and harden before cutting into squares. 

I usually leave the boys cookie jar on the table so they can have a nibble after dinner. Noah can be quite fussy about vegetables, so this is a sneaky way of getting some carrot into his diet! He loves them!
