Bacon, spinach & egg muffins

I had this for lunch the other day and it was so quick to make, full of speed food and completely syn free.


4 rashers of bacon (all visible fat removed)
2 handfuls of spinach
2 eggs
1 handful of plum tomatoes
black pepper


Spray a muffin tin with frylight and place the bacon inside, moulding the sides. I used 2 rashers per muffin. I then created another layer using spinach. Crack open an egg and gently place inside. Pop in the oven (around 180 degrees) until the eggs have cooked.

I served mine with plum tomatoes and spinach lightly fried in frylight.
